minutesA REALLY good butter cookie recipe with the added surprise of almond in the frosting. A great cookie for the holidays!
Ingredients
- Thumb Print Cookies
1 C softened butter
1/4 C sugar
1 tsp vanilla
2 C flour
1/2 tsp salt
1 C chopped pecans
- Frosting
1 C powdered sugar
1/2 tsp almond extract
Food coloring of choice
Directions
- Preheat oven to 300 degrees. Lightly grease a cookie sheet.
- Cream butter, sugar and vanilla.Add flour and salt and mix well.
- Roll into 1 inch balls and place on cookie sheet.
- Make a thumbprint divot on each ball (great job for the little ones!)
- Bake at 300 degrees for 20-30 minutes. Cool.
- Combine powdered sugar and the almond extract. Add 1-2 drops of the food coloring to get the desired color (note: I split the frosting in half and made 2 different colors for the cookies as pictured). Add a little water if needed to get the right consistency of the frosting – you don’t want it too runny or firm.
- Put a spoonful of frosting in each cookie. Let frosting set and enjoy!
