Who says root vegetables can’t be delicious and easy to make? Try this hearty side with any main dish or on its own!

Ingredients

  • 2 medium size sweet potatoes

  • 2 carrots

  • 2 parships

  • 1 rutabaga

  • 1 red onion

  • 2 Tbsp olive oil

  • 2 Tbsp minced garlic

  • salt and pepper to taste

Directions

  • Preheat oven to 400 degrees. Lightly spray a large sheet pan with cooking spray.
  • Peel and wash sweet potatoes, carrots, parsnips and rutabaga. Cut veggies into roughly equal size 1″ chunks.
  • Remove the paper and cut red onion into chunks. It will fall apart and that’s okay!
  • Put all veggies into a large bowl. Add the olive oil, garlic, salt and pepper – mix well.
  • Spread veggies into prepared sheet pan. Bake at 400 degrees for ~45 minutes or until softened and well roasted. Enjoy!

Notes

  • If you don’t like any of the veggies listed, make it your own! Just omit the stuff you don’t like, and add more of what you do like!
