Sooooo good … this is a citrusy, healthy and easy dish! These chicken thighs will become a regular go-to recipe!


  • 4 scallions, thinly sliced

  • 1 bunch cilantro, leaves and tender stems (remove stalks)

  • 5 garlic cloves, chopped in half

  • 1/4 C fresh lime juice

  • 1/4 C fresh orange juice

  • 1 Tbsp lime zest

  • 1 Tbsp orange zest

  • 1/4 C soy sauce

  • 2 Tbsp vegetable oil

  • 1 Tbsp salt

  • 8 skin-on, bone in chicken thighs


  • Marinade
  • Combine scallions, cilantro, garlic, lime and orange juice, lime and orange zest, soy sauce, oil and salt in a food processor. Pulse to create a coarse puree. Set aside 1/2 C of marinade.
  • Put chicken thighs and the rest of the marinade into a resealable plastic food bag. Coat the chicken and refrigerate for 30 minutes up to 2 hours.
  • Preheat broiler to 500 degrees. Prepare a baking sheet by lining with aluminum foil. Place wire baking rack on the pan, and spray with cooking spray. Place marinated chicken thighs skin side down on rack and broil for 8 minutes. Discard any remaining marinade from bag.
  • Turn thighs and continue to broil for ~15 minutes more, or until thickest part of thigh registers at 165 degrees with a meat thermometer.
  • Serve chicken with reserved marinade. Enjoy!
