Mozzarella Chicken

A wonderfully fragrant and delicious dish you can whip up for dinner in no time!


  • 4 -6 chicken breasts

  • 2/3 C flour

  • 3 Tbsp Italian seasoning

  • 1 Tbsp garlic powder

  • olive oil for cooking

  • 2 C shredded mozzarella cheese

  • 3 oz white wine* (see notes)

  • 3 oz brandy*

  • 3 -4 whole mushrooms cut in half lengthwise (optional)


  • Preheat oven to 350 degrees. Spray a glass or ceramic 9×13 baking dish with cooking spray.
  • Pound the chicken breasts until flat. If you have really large breasts cut them in half.
  • Combine flour, Italian seasoning and garlic powder in a gallon size plastic food bag. Put in chicken breasts 1-2 at a time and shake well to coat.
  • Heat olive oil in a large saute pan. Once hot, add the chicken breasts 2-3 at a time and cook for about 2 minutes until golden brown, then turn and cook the other side for about 2 minutes. Put in prepared baking dish and continue to cook all of the chicken breasts, adding to the baking dish.
  • Evenly top the chicken breasts with mozzarella cheese. If using, put a mushroom half on top of each breast.
  • Combine the wine and brandy and pour over the chicken. Bake for 15-20 minutes until the cheese is melted and lightly browned. Serve over cooked pasta or by itself and enjoy!


  • * You can substitute 1 C chicken broth for the wine/brandy mixture (but why would you??).
