A REALLY good butter cookie recipe with the added surprise of almond in the frosting. A great cookie for the holidays!

Ingredients

  • Thumb Print Cookies
  • 1 C softened butter

  • 1/4 C sugar

  • 1 tsp vanilla

  • 2 C flour

  • 1/2 tsp salt

  • 1 C chopped pecans

  • Frosting
  • 1 C powdered sugar

  • 1/2 tsp almond extract

  • Food coloring of choice

Directions

  • Preheat oven to 300 degrees. Lightly grease a cookie sheet.
  • Cream butter, sugar and vanilla.Add flour and salt and mix well.
  • Roll into 1 inch balls and place on cookie sheet.
  • Make a thumbprint divot on each ball (great job for the little ones!)
  • Bake at 300 degrees for 20-30 minutes. Cool.
  • Combine powdered sugar and the almond extract. Add 1-2 drops of the food coloring to get the desired color (note: I split the frosting in half and made 2 different colors for the cookies as pictured). Add a little water if needed to get the right consistency of the frosting – you don’t want it too runny or firm.
  • Put a spoonful of frosting in each cookie. Let frosting set and enjoy!
