Perfect Peanut Brittle

An easy and super good peanut brittle recipe!

Ingredients

  • 1 C white sugar

  • 1/2 C light corn syrup

  • 1/4 tsp salt

  • 1/4 C water

  • 1 C peanuts (salted cocktail peanuts work great)

  • 2 Tbsp butter softened

  • 1 tsp baking soda

Directions

  • Grease a 9×13 cookie sheet
  • In a heavy 2 quart saucepan, bring sugar, corn syrup, salt and water to a boil over medium high heat.
  • Once sugar is dissolved, add the peanuts.
  • Set a candy thermometer in the pan, taking care not to touch the bottom of the pan. Continue cooking until temperature reached 300 degrees F (150 degrees C)* on the candy thermometer.
  • Remove from heat, and quickly stir in the butter and baking soda.
  • Immediately pour into prepared pan, and using 2 forks “pull”the mixture to spread on the cookie sheet.
  • Let cool for 1/2 hour; use a metal spatula to remove from pan and break into pieces.
  • Enjoy!

Notes

  • * Note: Make sure the temperature of the mixture gets to 300 degrees F or it will not harden properly which would be a total bummer!
