Restaurant style crispy skin salmon. Easy, fast, and delicious!

Ingredients

  • 1 1/2 lb salmon fillet

  • salt and pepper

  • 1 Tbsp olive oil

  • 1 Tbsp butter

Directions

  • Cut off thin edge of the salmon fillet and freeze or save for later.
  • Cut the fillet into 4 equal pieces (approx. 6 oz each).
  • Pat pieces dry and season both sides with salt and pepper.
  • Put olive oil and butter into a cast iron frying pan. Heat pan over medium high heat.
  • Carefully put salmon fillets into hot pan skin side down.
  • Cook for 5 minutes undisturbed. After 4 minutes carefully look under on fillet to ensure skin is getting crispy but not burned. If it’s not getting crisp, turn up the heat.
  • Turn fillets over and cook another 2 minutes until the internal temp is 130 degrees.Remove from pan, cover with foil and let rest for 3 minutes (salmon will cook a bit more).
  • Serve and enjoy!
