Pizza Bianca, or white pizza, is a cheesy alternative to the traditional red pizza sauce. Great as an appetizer or main dish!


  • 16 oz fresh pizza dough (store bought or make your own!)

  • 2 T olive oil, divided

  • 2/3 C whole milk ricotta cheese

  • 1 T minced garlic

  • 1/4 tsp red pepper flakes

  • 1/4 tsp salt

  • 2 C shredded mozzarella cheese

  • 8-10 fresh basil leaves

  • 1/4 C grated pecorino romano cheese


  • Remove pizza dough from fridge. Place 1 T olive oil in a bowl, add dough, and toss. Let sit for 1 hour – it will slightly grow.
  • Mix ricotta cheese, garlic, red pepper and salt in separate bowl – set aside.
  • Preheat oven to 450 degrees.
  • Punch dough down to remove air bubbles. Place dough on a baking sheet and spread with your fingers until dough is 1/4 inch thick, and roughly 12 inches round. Create a slight lip around the edges for the crust.
  • Leaving an inch around the edge, sprinkle the mozzarella cheese over the crust. Place dollops of the ricotta cheese mixture on top. Place the basil leaves next, then sprinkle with the pecorino romano cheese. Drizzle the remaining 1 T of olive oil over the top.
  • Bake in preheated oven for ~15 minutes until cheese is bubbly and slightly golden brown. Enjoy!
