Ingredients
1 1/2 lb salmon fillet
salt and pepper
1 Tbsp olive oil
1 Tbsp butter
Directions
- Cut off thin edge of the salmon fillet and freeze or save for later.
- Cut the fillet into 4 equal pieces (approx. 6 oz each).
- Pat pieces dry and season both sides with salt and pepper.
- Put olive oil and butter into a cast iron frying pan. Heat pan over medium high heat.
- Carefully put salmon fillets into hot pan skin side down.
- Cook for 5 minutes undisturbed. After 4 minutes carefully look under on fillet to ensure skin is getting crispy but not burned. If it’s not getting crisp, turn up the heat.
- Turn fillets over and cook another 2 minutes until the internal temp is 130 degrees.Remove from pan, cover with foil and let rest for 3 minutes (salmon will cook a bit more).
- Serve and enjoy!
