Honey Cornbread

Cornbread is easy to make, and a delicious addition to any meal!


  • 1/2 C butter melted + 1 Tbsp

  • 1/4 C vegetable oil

  • 3/4 C sugar

  • 1/3 C honey

  • 2 eggs

  • 1 1/4 C buttermilk

  • 1 C flour

  • 3/4 C cornmeal

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp kosher salt


  • Place 9″ cast iron skillet in the over and preheat to 375 degrees.
  • In a mixing bowl whisk together the melted butter, oil, sugar, honey, eggs and buttermilk. Mix well with wooden spoon or rubber spatula.
  • Add flour, cornmeal, baking powder, baking soda, and salt. Mix until dry ingredients are incorporated but do not over mix – a few lumps are okay!
  • When oven is up to temp, carefully remove skillet. Put the additional 1 Tbsp of butter into the pan and spread around bottom and sides with a pastry brush.
  • Pour batter into the pan, and return to the oven. Bake for ~25 minutes or until set. Check by inserting a toothpick into the center to ensure not wet. The top will be golden and edges should pull away from the pan.
  • Let cool ~5 minutes, slice into wedges and serve with butter and honey. Enjoy!
