Amazing Toffee

Delicious buttery rich toffee that’s easy to make!


  • 1 C chopped pecans

  • 1 C butter

  • 1 C granulated sugar

  • 1/2 tsp kosher salt

  • 1 tsp vanilla

  • 1 C milk chocolate chips


  • Line a 9 inch square pan with parchment paper.
  • Spread pecans on top of parchment paper.
  • Add butter, sugar and salt to a 2 quart saucepan; bring to a boil over med-high heat stirring frequently to dissolve the sugar.
  • Bring to a boil, and place candy thermometer into pan, taking care not to touch the bottom. Boil until mixture reaches 300 degrees on the thermometer, stirring continually. (Note: mixture will become brown but it is not burning – just be sure to keep stirring).
  • Once the thermometer reads 300 degrees, remove from heat and add vanilla. Carefully pour mixture over chopped pecans.
  • Sprinkle chocolate chips over top and let sit for a few minutes to get melty. Once soft, carefully spread the chocolate evenly over the top or the toffee.
  • Place in the refrigerator to cool completely – about 2 hours. Once cooled, lift the parchment paper with the toffee out of the pan and place on a cutting board. Cut pieces of toffee with a sharp knife and store in a cool place.
