Beef Bites with Merlot Cream

An easy and tasty bite of beef – great as an appetizer, or main dish!


  • 3/4 C mayonnaise

  • 1/2 C sour cream

  • 2 Tbsp minced garlic

  • 3 Tbsp merlot or dry red wine

  • 1 1/2 lbs beef tenderloin, cut into 1 1/2 ” pieces

  • salt & pepper to taste

  • olive oil for cooking


  • Make the merlot cream: combine the mayonnaise, sour cream, garlic and wine. Whisk together well, and refrigerate for 1 or more hours to let the flavors meld.
  • Season the beef pieces with salt and pepper. Rest on the counter for about 30 minutes to come to room temperature.
  • Heat a cast iron skillet so it is piping hot. Add about 2 Tbsp of olive oil just to cover the pan. Carefully add the beef pieces and sear, turning to sear all sides. Cook to medium rare and remove from pan.
  • Eat right after cooking served with the merlot cream. Enjoy!
