Mushroom and Gorgonzola Flatbread

Ingredients

  • 1 C sliced mushrooms

  • 1/2 C thinly sliced red onion

  • 1 Tbsp minced garlic

  • olive oil

  • Flatbread crust

  • 1 C mozzarella cheese

  • 1/2 C gorgonzola cheese crumbles

Directions

  • Preheat oven to 400 degrees. Spray a baking sheet with cooking spray.
  • Heat a saute pan and add a thin layer of olive oil. Add mushrooms and onions and saute until tender. Add garlic and saute 1-2 minutes more. Remove from heat.
  • Put the flatbread on the prepared pan. Drizzle a little olive oil on the flatbread and brush evenly. Sprinkle the mozzarella cheese over the top, then spread the mushroom mixture over the cheese. Bake at 400 degrees for 12-15 minutes.
  • Remove from oven, and sprinkle the gorgonzola cheese over the top. Slice and enjoy!
