Ingredients

  • Prepared flatbread (e.g. Boboli, naan, etc. – in this recipe I used a 2 count package of naan bread)

  • 2-3 Tbsp olive oil

  • 4 cloves minced garlic

  • 2 tomatoes, thinly sliced

  • 8 oz fresh mozzarella, sliced

  • 6-8 fresh basil leaves roughly chopped

  • balsamic vinegar for drizzling

Directions

  • Preheat the oven to 425 degrees. Lightly spray a baking sheet with cooking spray. Place the flatbread on the pan.
  • Lightly brush a thin layer of olive oil on the flatbread. Spread garlic over the flatbread, and evenly place the tomato slices over the top (they should not cover the whole flatbread). Put the mozzarella over the flatbread, cutting or ripping the slices into smaller pieces. Sprinkle the basil over the flatbread.
  • Bake at 425 degrees for 15-20 minutes until the cheese is melted. Remove from oven, and drizzle the balsamic vinegar over the flatbread. Slice and enjoy!
