An easy, delicious meatless quiche for breakfast, brunch or dinner!

Ingredients

  • One frozen deep dish pie crust shell

  • 6 eggs

  • 1/2 C half and half or whole milk

  • 1/2 C sliced red onion

  • 1/2 C chopped bell pepper (red, yellow or orange brings in some color!)

  • 1 1/2 C fresh spinach leaves

  • 1/2 C shredded swiss cheese

  • 1/2 C shredded gouda cheese

  • 1/2 C crumbled feta cheese

  • salt and pepper to taste

Directions

  • Preheat oven to 350 degrees.
  • Slice onion into thin strips. Melt 1 Tbsp of butter in pan, add onions, and cook until onions are carmelized, about 5-10 minutes. Add the bell pepper and spinach toward the end, cooking until the spinach is just wilted. Remove from heat.
  • Crack eggs into bowl; add half and half and whisk until well mixed.
  • Add saute’d veggies and cheeses to egg mixture; season with salt and pepper to taste.
  • Pour mixture into frozen pie crust shell.
  • Bake at 350 degrees for 50 minutes, or until set in center.
  • Enjoy!

Notes

  • The beauty about quiche is that you can modify the recipe with the ingredients you have on hand or prefer. If you want meat in it, add it! If you want more veggies or cheese, go for it! Like extra seasonings? Put it in! You’re the chef – make it your own!
