This method is SO easy and results in perfectly medium rare Prime Rib every time!!


  • 4-5 lbs prime rib roast, bone in

  • 1 C butter softened

  • 2/3 C seasoning of choice (See Notes below)


  • Prepare roasting pan with wire rack at bottom. Spray pan and rack with cooking spray.
  • Pat roast dry with paper towels. Generously season all sides with salt and pepper, and let come to room temperature (about 30-60 mins).
  • Preheat oven to 500 degrees
  • Calculate the cooking time. Multiply the weight of the roast by 5 minutes and round up to the nearest number**.
    **For example, if you have a 4lb, 11oz roast, take 4.11 x 5 = 20.55. Round up to 21. You will cook this roast for 21 minutes at 500 degrees.
  • Thoroughly mix softened butter with your seasoning. Apply the mixture to the roast, covering all sides to make a butter/seasoning coating. Place roast fat side up on the rack.
  • Cook the roast uncovered for the calculated minutes at 500 degrees. After that time, turn off the oven and leave the roast in the oven for 2 hours regardless of the size of the roast. DO NOT OPEN THE OVEN DURING THIS TIME!
  • After 2 hours, take roast out of the oven and serve right away – no additional resting is necessary.
  • Enjoy!


  • Seasoning – When buying a prime rib roast, check with your grocer to see if a seasoning packet comes with the roast (some provide for free!). If not, you can either purchase prime rib rub seasoning or make your own. If making your own, include a blend of pepper, salt, garlic powder, dried thyme, rosemary and sage to make ~2/3 C.
