Ingredients

  • 3 Tbsp butter

  • 1/2 C chopped onion

  • 3 cloves minced garlic

  • 1 1/2 C arborio rice

  • 1 C dry white wine

  • 4 C chicken broth, heated to warm

  • 1 C shredded parmesan cheese

  • 1/2 tsp nutmeg

  • salt and pepper to taste

Directions

  • Melt butter in large saute pan. Saute onion and cook 3-5 minutes until translucent. Add garlic, and cook another minute.
  • Add the rice, stir to coat, and toast the rice for 3-5 minutes.
  • Add the wine and simmer until the wine is mostly soaked into the rice.Add the warm chicken broth 1 C at a time, stirring until absorbed before adding more broth. Continue to cook over medium heat until rice is creamy and liquid is absorbed (about 20- 30 minutes) . If needed, add a bit more chicken broth (or wine!) to get to the right creamy consistency.
  • Remove from heat and stir in parmesan cheese, nutmeg, salt and pepper. Serve immediately – enjoy!
