Roasted Baby Potatoes

A quick, easy and flavorful side dish you can make for dinner tonight!

Ingredients

  • 2 lbs baby or fingerling potatoes* (see notes below)

  • 2 Tbsp olive oil

  • 2 cloves crushed garlic

  • 1 Tbsp dried rosemary

  • 1 Tbsp dried thyme

  • salt and pepper to taste

Directions

  • Preheat oven to 400 degrees. Spray or spread a small amount of olive oil over the surface of a large cookie sheet pan.
  • Wash the potatoes and cut in half.
  • Put the potatoes, olive oil, garlic and spices in a bowl. Mix well until potatoes are coated.
  • Pour mixture into the prepared pan and arrange potatoes cut side down.
  • Bake in oven for ~40 minutes or until nicely roasted. Enjoy!

Notes

  • You can adapt this recipe to use any kind of potato, and cut based on preference.
  • This recipe calls for dried herbs, but if in season, fresh herbs work great!
