Roasted Chicken Thighs

Easy oven roasted chicken that is crispy on the outside but moist and flavorful inside!


  • 6 chicken thighs

  • 2 Tbsp garlic powder

  • Salt and Pepper to taste


  • Preheat the oven to 425 degrees.
  • Dry the chicken thighs – this will keep them from sticking to the pan.
  • Season the chicken well with the garlic powder, salt and pepper.
  • Heat an oven proof cast iron or stainless steel skillet over medium high heat on the stove until it’s REALLY hot. Pour a thin layer of oil into the hot pan and heat until it shimmers (should only take a few seconds).
  • Add the chicken to the pan skin side down. Cook over medium-high to high heat, taking care not to burn the chicken. Leave it be for ~10 minutes – don’t move, touch or peek underneath! Sear until the skin is well browned and crispy.
  • Once browned, turn the chicken thighs so they are skin side up. Put the skillet in the oven and roast until the chicken gets to 165 degrees at its thickest part (~15-20 mins). Enjoy!
