Sugared Cranberries

These beautiful sugared cranberries look fancy, but are super easy to make! They are great as a snack, or used as a garnish. Skewer a few and add to a festive cocktail (check out my recipe for a Cranberry Manhattan!) or use these to decorate pies, creme brulee, and other desserts.

Ingredients

  • 1/2 C water

  • 1/2 C sugar

  • 1 C fresh cranberries

  • sugar for dusting (approx. 1/3 C)

Directions

  • In a small sauce pan whisk water and sugar together over medium heat until the sugar is dissolved. Remove from heat.
  • Add cranberries to syrup; stir to coat completely. Cover pan with lid, and let steep for 10 minutes.
  • With a slotted spoon, remove the cranberries from the syrup draining well. Place the cranberries on a piece of parchment paper laid on top of a cooling rack.Separate them so they do not touch – they will be sticky! Let dry for 1 hour.
  • Place the remaining sugar on a plate, and roll the cranberries until coated.
  • Store in a lidded container – good for ~1 week. Enjoy!!

Notes

  • Add a small container of uncooked rice in the container with the cranberries to draw the moisture out. The cranberries may start “weeping” after a few days – you can roll in sugar again.
