Spinach with Garlic

Eat your spinach, your mom will be proud of you! Such a tasty and super easy side perfect for any meal. Oh, and it’s healthy too!

Ingredients

  • 1 Tbsp olive oil

  • 1 Tbsp minced garlic

  • 6 C fresh spinach leaves* (see notes)

Directions

  • Heat the olive oil in a large saute pan. Add garlic and cook about 1 minute.
  • Start adding spinach in batches, using tongs to toss through garlic and oil.
  • Continue to add remaining spinach and cook until spinach wilts, about 3-5 minutes.
  • Serve immediately – enjoy!

Notes

  • Spinach wilts and loses a lot of volume when cooked. You need about 3 C fresh spinach or so per serving.
